Oatmeal Cake

 

 

Pour 1¼ cups boiling water over

            1-cup quick oats

Let stand 20 minutes.

Mix together:

1 stick (½ cup) butter

1-cup brown sugar

1-cup granulated white sugar

1-teaspoon soda

1-teaspoon cinnamon

1-teaspoon salt

1-teaspoon vanilla

1½ cups flour

2 eggs

Add a little apple sauce if the oats are too dry. 

Mix all preceding ingredients thoroughly. 

Bake in a 9x13” pan at 350ºF for 25-30 minutes.

 


Topping for cake:

Pour over cake while it is still warm. 

Mix together:

            1-cup brown sugar

            1-cup chopped pecans

            1-cup flaked coconut

            4 tablespoons butter

            ½ cup cream

Put mixture on the cake immediately after it comes out of the oven. 

Broil the cake with topping for about 5 minutes. 

Remove, and cool in the pan.
