Yeah Thane, you're probably right. That marinated steak you posted sounds TASTY - gonna have to drop some of that on the BBQ (yes, BBQ - not grill ) when we next have one.
And Danny - I think EVERYONE'S been mentioning food. Although, I finished dinner maybe 10 minutes ago (it's midnight here ) and I'm hungry again... *goes and raids the fridge*

I have to say that Thane's Idea about just buying a roast and cutting the steaks from it sounds like a good idea and his method of cooking them sounds tasty although I prefer to just massage the meat with onion & garlic powder (Heh which I suppose negates my parents vampire theory), then throw on the grill flipping it over after a few minutes until the temp in the center of the steak just barely reaches 140f yes I use a meat thermometer I want to make sure the meat is cooked just long enough to kill off possible parasites. _________________ "Political Correctness is tyranny with manners." I rarely cook stuff that could be termed "BBQ"....
Because my mother has an absolutely terrible tomato allergy (think peanut allergy levels), I'm not free to use any of those kinds of sauces. Tomato paste, powder, etc, anything tomato is taboo.
So I've had to come up with a few other things.
Stubbs, Red Creek, and Yoshida's all make excellent grilling sauces, and tomato-free at that. I'll occasionally make Italian Pesto Chicken as well. But my favorites are homemade.
Take some liquid smoke, add in some Worchester sauce, give it a pinch each of sage, garlic, black and white pepper, ground hot pepper, celery flake, and parsley. A slight touch of salt helps bring out the full flavor; but be careful not to put too much in - don't want to overpower it.
Also good are pepper burgers (not for the faint of heart - these burgers bite back). Take ground hamburger, as lean as you can get it. Form it into patties as desired. Cook them the same way I describe cooking steak, but ...
Every time you flip the patties, smother them in Durkee's six pepper blend (or make your own - it's salt, chile pepper, black & white pepper, ground garlic, chopped onion, red pepper, bell pepper). The resulting hamburger will almost literally burn your mouth off, if done properly, but will be one of the most flavorful hamburgers you've ever tasted. That is, assuming it doesn't render you incapable of tasting it with the first bite. |

I'm not too picky about my food. I like meat, I like fruit, and I like veggies. So, I'll eat almost anything, with the usual exceptions, based on particular foods I think just taste nasty. _________________

Actually, Thane, BBQ doesn't need tomato. It's more about slow-cooking over serious smoke with a good acid-foundation marinade; your homebrew "grilling" sauce sounds a lot like my homemade BBQ marinade, 'cept I add in a touch of cider vinegar, or just plain hard cider roundabout the last cookout of the year, for the acid. Helps tenderize the meat, and adds a nice flavor. Also, I don't use liquid smoke- GOOD wood(apple, pear, birch, or red maple, slightly green)will work great for this instead.
And your pepper burgers sound like my kinda food; one thing I'd add is to mix in ONE -and no more than one- fine-diced Habanero pepper per three pounds of ground beef. This is the amount for "normal peoples" food; if yer crew is like me, add two or more per pound.
As for my personal preference: Technically, I'm omnivorous. The only reason I am so is that science has yet to create a way to artificially provide all the necessary nutrients existing only in food that didn't scream when it died. _________________ "Oh s***. Not again." - Random Pedestrian |
