Well, we can't really sing karaoke with these, since they have more or less no lyrics but we can still share our favorites, right?
So, I'll start with "Chariots of Fire" by Vangelis. Very beautiful piece of musical art. I've never seen the movie it was made for BTW but I know the scene were it's played and I have to day it fits perfectly. _________________ Tygon Panthera - name and species

One of the more interesting, and certainly enjoyable to listen to, collections I've picked up over the years is a "History of Rock Instrumentals". Then again, I've also got a nice collection of Appalachian "mountain" music, and Celtic and Scottish instrumental music and, yes, I love the 'pipes. _________________ "But the wildest of all the wild animals was the Cateagle. as instrumentals go, I love some Evangelion instrument only songs. Well some songs that is. "Ritsuko" is great, mainly a piano peice but really well done. _________________ Big... Shinee.. Red.. Button!!!

Instrumental music... I don't suppose classical counts, 'cause if it does, I'll need a bit of space to sum up my favourite pieces.
For more modern ones... I second the vote of "Chariots of Fire", and the soundtrack of 1492 (Conquest of Paradise, also Vangelis) is good material to dream away at. "Fire On High" from Electric Light Orchestra. It's also the theme song to my story. I also like "Chariots of Fire", and also "Alex F".
For great Classic (not Classical) instrumentals, "The Pink Panther Theme" by Henry Mancini, Theme from Hawaii 5-0, let's see, and the theme from the movie "Silent Running."
I also love bagpipe and Celtic music, especially Celtic harp.

the version of Jimi Hedrix' "Little Wing" recorded by Stevie Ray Vaughn

That's right Tygon, It was by Dick Dale and The Ventures.
I don't know how he could stand to play a guitar with such heavy strings on it though. .013" (0.33mm) high E and tuned to standard pitch.
SRV used to use a .013" high E but turned down to E flat.

David Lanz did a piano piece called "Vesuvius" that I really like. Not sure if he wrote it or it's a piano adaptation of the song you mention. As to instrimentals, I like David Lanz's Piano stuff in general.
